The Nile at Jinja, and the day you will still be describing a year later.
Some people want the vehicle to stop and the day to start. East Africa is unusually good for that, because the water, the forest and the mountains sit close enough together that you can do something hard in the morning and be somewhere soft by dark.
The White Nile at Jinja is the obvious one. The rapids below the source run grade three to grade five, they run all year because the river is fed by a lake rather than by rain, and a calmer line is a genuine option on the same day in the same raft. Quad bikes, a bungee over the river and a sunset paddle in a dugout all start within a few minutes of each other.
Further out: mountain biking the crater field above Fort Portal, kayaking on Lake Bunyonyi where there is nothing in the water that bites, the canopy walkway in Nyungwe, and the hour on foot behind a ranger at Ziwa that people tend to remember longer than the drives.
